Tortellini With Ham And Mushrooms

  1. Cook pasta in a large saucepan of boiling salted water according to package directions. Drain well.
  2. Meanwhile, heat oil and butter in a large skillet on high heat. Saute ham, mushrooms and garlic for 3-4 mins, until ham is crisp and mushrooms are tender. Add wine, stir, then simmer for 2-3 mins until almost evaporated.
  3. Add pasta, cream and Parmesan cheese. Toss well and season to taste. Serve sprinkled with parsley and additional Parmesan cheese, if desired.
