Veal Campagnola

  1. Preheat broiler. In a shallow dish, combine flour and paprika. Season. Dust veal steaks in flour mixture, shaking off excess.
  2. Heat butter and olive oil in a large frying pan over high. Cook veal for 1 min per side. Arrange in a single layer in a shallow baking dish. Top each piece of meat with a slice of tomato, tomato puree and sliced mozzarella cheese. Broil for 4-5 mins, until bubbly and golden. Sprinkle with fresh basil leaves before serving.
  3. Serve with sauteed potatoes and salad or vegetables.
