Pork And Soba Noodle Salad
- 1 lb pork tenderloin
- 6 tbsp hoisin sauce
- 1/2 lb soba noodles
- 1 tbsp oil
- 1 head baby cos or romaine lettuce, leaves separated, finely shredded
- 1 None cucumber, halved, sliced
- 1 None bunch radish, thinly sliced
- 1/2 cup mint leaves, torn, plus extra to serve
- 3 None spring onions, thinly sliced
- 6 tbsp sweet chili sauce
- 1 tsp sesame oil
- Place pork in a medium bowl and coat with hoisin sauce. Cover and marinate for 15-30 minutes.
- Cook soba noodles in a large pot of boiling, salted water for 3-4 minutes, until just tender. Drain and refresh under cold running water. Set aside.
- Heat oil in a medium skillet on high. Cook pork 3-4 minutes each side. Reduce heat to low and cook pork for further 6-7 minutes each side, until golden and cook through. Transfer pork to a plate, cover and rest for 15 minutes.
- Meanwhile, in a large bowl, combine lettuce, cucumber, radish, mint, and onions. Slice pork and toss with salad and combined sweet chili sauce and sesame oil.
