Tandoori Beef Skewers
- 1 lb beef sirloin steak, thinly sliced
- 1/4 cup tandoori paste
- 1 tbsp vegetable or peanut oil
- 1 piece (1 inch) ginger, peeled and cut into matchsticks
- 2 None carrots, peeled and cut into matchsticks
- 4 cups cooked basmati rice
- 1 None green pepper, seeded and thinly sliced
- 8 oz cherry tomatoes, halved
- 1/2 cup bought tzatziki sauce
- 1/4 cup cilantro leaves
- Combine the beef, tandoori paste and half the oil in a large bowl. Let stand for 5 mins. Thread the beef onto 12 skewers.
- Heat a wok or large skillet on high heat. Add the remaining oil and swirl to coat the surface. Add the ginger and carrot and stir-fry for 2 mins or until fragrant. Add the rice, pepper and tomato and stir-fry for 3 mins or until the vegetables are tender and the rice starts to crisp.
- Preheat the broiler on high. Broil the skewers for 2 mins each side or until cooked through. Spoon the rice mixture onto a serving platter. Top with the skewers and drizzle with tzatziki. Serve sprinkled with cilantro.
