Dairy-Free Apple Muffins
- 1 None egg, lightly beaten
- 1 cup soy milk
- 1/2 cup vegetable oil
- 1 1/2 cups self-rising flour
- 1/2 cup flour
- 1 tsp baking soda
- 1 1/2 tsp ground cinnamon
- 2 None Granny Smith apples, cored, 1 finely chopped, 1 thinly sliced
- 3/4 cup firmly packed brown sugar
- 1 tbsp granulated sugar
- Preheat the oven to 350u0b0F. Lightly grease a 12-cup muffin pan or line it with paper liners.
- Combine egg, soy milk and oil in a medium bowl. Sift flours, baking soda and 1 tsp cinnamon into a large bowl. Stir in chopped apple, brown sugar and egg mixture until just combined (do not overmix).
- Spoon mixture into prepared pan. Top with sliced apple.
- Bake 20 mins, or until lightly browned and springy to touch.
- Combine granulated sugar and remaining 1/2 tsp cinnamon. Sprinkle hot muffins with cinnamon sugar. Cool in pan 5 mins. Remove from pan; cool on wire rack. Serve muffins warm or at room temperature.
