Blackberry Cream With Honey Wafers

  1. Preheat the oven to 350u0b0F. Line 3 baking sheets with parchment paper.
  2. To make the honey wafers, place all the ingredients in a food processor. Pulse until smooth and well combined. Spread the batter onto the prepared baking sheets to form eight 4-inch rounds. Bake for 8-10 mins, until golden. Leave to cool on the baking sheets.
  3. For the blackberry cream, mix together the mascarpone, cream and powdered sugar until smooth, then stir in the blackberries. Place a wafer on each serving plate and top with a spoonful of blackberry cream. Cover with another wafer, dust with powdered sugar and serve.
