Grilled Lime And Ginger Mussels

  1. Preheat grill to high.
  2. Arrange mussels in disposable aluminium pan. Place on grill and cover. Cook, 5-6 minutes, until mussels open.
  3. Meanwhile, combine butter, cilantro, ginger, and lime zest. Season to taste and mix well. Thinly spread half the butter on one side of each bread slice. Grill bread, 1-2 minutes each side, and halved limes on cut side until grill marks appear.
  4. Add remaining butter mixture and lime juice to mussels, and stir through until melted and combined.
  5. Serve mussels and pan juices sprinkled with spring onion and cilantro leaves. Accompany with bread and grilled lime halves.
