Grilled Lime And Ginger Mussels
- 2 1/4 lbs mussels, scrubbed, debearded
- 6 1/3 tbsp butter, at room temperature
- 1 tbsp chopped cilantro leaves, plus more whole leaves, to serve
- 1 None (3/4-inch) piece ginger, peeled, grated
- 2 tbsp lime juice, plus 1 tsp zest, and 2 whole limes, halved
- 1 None French baguette, thinly sliced
- None None Finely sliced spring onion, to serve
- Preheat grill to high.
- Arrange mussels in disposable aluminium pan. Place on grill and cover. Cook, 5-6 minutes, until mussels open.
- Meanwhile, combine butter, cilantro, ginger, and lime zest. Season to taste and mix well. Thinly spread half the butter on one side of each bread slice. Grill bread, 1-2 minutes each side, and halved limes on cut side until grill marks appear.
- Add remaining butter mixture and lime juice to mussels, and stir through until melted and combined.
- Serve mussels and pan juices sprinkled with spring onion and cilantro leaves. Accompany with bread and grilled lime halves.
