Penne With Sardines And Basil
- 2 tbsp oil
- 1 None onion, peeled and finely diced
- 1 clove garlic, peeled and finely diced
- 4 1/2 lb ripe tomatoes, diced
- 1 tbsp tomato paste
- 1/3 cup fresh basil, finely chopped, a little reserved for garnish
- 1 lb penne pasta
- 1 None red onion, peeled and finely diced
- 1 None 12 oz can tuna in oil, drained
- 1 None can sardines in oil, drained
- 1/2 cup Parmesan cheese, shaved
- Heat 1 tbsp oil in a saucepan and saute the onion and garlic for 2 mins. Add the tomatoes and tomato paste and season. Add a pinch of sugar, bring to a boil, cover then simmer for 20 mins. Puree the sauce then pass through a strainer into a clean saucepan. Bring to a boil again, cover and simmer for 1 hour. Add the basil.
- Cook the pasta in boiling salted water according to the package instructions. Drain, reserving 5 tbsp cooking water, then return to the pan.
- Meanwhile, heat 1 tbsp oil in a frying pan and saute the red onion for 5 mins. Add to the tomato sauce along with the tuna and sardines and bring to a boil then toss with the pasta. Serve sprinkled with the Parmesan and reserved basil.
