Penne With Sardines And Basil

  1. Heat 1 tbsp oil in a saucepan and saute the onion and garlic for 2 mins. Add the tomatoes and tomato paste and season. Add a pinch of sugar, bring to a boil, cover then simmer for 20 mins. Puree the sauce then pass through a strainer into a clean saucepan. Bring to a boil again, cover and simmer for 1 hour. Add the basil.
  2. Cook the pasta in boiling salted water according to the package instructions. Drain, reserving 5 tbsp cooking water, then return to the pan.
  3. Meanwhile, heat 1 tbsp oil in a frying pan and saute the red onion for 5 mins. Add to the tomato sauce along with the tuna and sardines and bring to a boil then toss with the pasta. Serve sprinkled with the Parmesan and reserved basil.
