Colorful Fried Rice Salad

  1. Heat oil in a large frying pan or wok over high heat. Saute onion, peppers and bacon for 3-4 mins. Add rice, corn, spring onion and sauces. Stir-fry for 2-3 mins, mixing well. Transfer to a bowl to cool. Top with cherry tomatoes and cilantro leaves and serve, or cover and chill until ready to serve.
