Carrot Cake With Cream Cheese Frosting

  1. Preheat oven to 350u0b0F. Lightly grease and line an 8 inch round cake pan.
  2. Whisk together eggs, sugar and oil. Sift flour, baking soda and spices together then fold in. Mix in grated carrot, walnuts and vanilla until combined. Transfer to prepared pan and bake for 50-55 mins, until a skewer inserted in the center comes out clean. Let cool in pan then transfer to a wire rack and let cool completely.
  3. Meanwhile, to make the frosting, beat cream cheese, butter, powdered sugar and vanilla together until smooth. Spread over cake. Serve in wedges.
