Low-Fat Rigatoni Caesar Salad(Yields 4 Servings)
- 2 large ripe tomatoes, cut wedged
- 6 finely chopped anchovy fillet
- 3 Tbsp. fresh lemon juice
- 2 Tbsp. olive oil
- 1 tsp. minced garlic
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1 lb. rigatoni or ziti
- 1/4 c. freshly grated Parmesan cheese
- 4 c. torn romaine lettuce (fresh), shredded
- Parmesan cheese
- Combine the tomatoes, anchovies, lemon juice, olive oil, garlic, salt and pepper in a large serving bowl.
- Let stand for 20 minutes.
- Meanwhile, cook the pasta according to package directions; drain.
- Toss the dressing with hot pasta and Parmesan cheese.
- Let stand for 10 minutes.
- Stir in the romaine lettuce and serve immediately.
- Garnish with shredded Parmesan cheese. Enjoy!
