Pasta With Tuna And Mushrooms
- 1 tbsp olive oil
- 1 None onion, peeled and finely chopped
- 7 oz closed cup mushroom, sliced
- 1 tbsp tomato paste
- 14 oz large pasta shells
- 1 1/4 cup heavy cream
- 14 oz canned tuna in oil, drained and flaked
- 1 None lemon, zest finely grated and juiced
- 1 tbsp parsley, chopped
- 1/4 cup grated parmesan
- Heat the oil in a large frying pan over a high heat. Saute the onion for 2-3 mins, until tender. Add the mushrooms and saute for a further 3-4 mins, until golden. Next stir in the tomato paste.
- Meanwhile, cook the pasta in a large saucepan of boiling salted water, following the packet instructions. Drain, reserving 1/3 cup of the pasta water.
- Pour the cream into the pan with the mushrooms and simmer for 1-2 mins, until thickened slightly.
- Add the pasta and the reserved liquid, the tuna, zest and juice. Season to taste and toss well. Toss the parsley and parmesan through, and serve.
