Pasta With Tuna And Mushrooms

  1. Heat the oil in a large frying pan over a high heat. Saute the onion for 2-3 mins, until tender. Add the mushrooms and saute for a further 3-4 mins, until golden. Next stir in the tomato paste.
  2. Meanwhile, cook the pasta in a large saucepan of boiling salted water, following the packet instructions. Drain, reserving 1/3 cup of the pasta water.
  3. Pour the cream into the pan with the mushrooms and simmer for 1-2 mins, until thickened slightly.
  4. Add the pasta and the reserved liquid, the tuna, zest and juice. Season to taste and toss well. Toss the parsley and parmesan through, and serve.
