Spiced Black Sticky Rice
- 3.5 oz black glutinous rice, soaked in water for 3 hours or overnight, drained
- 1 None cinnamon stick
- 1 None star anise
- 1 None clove
- 1 (13.5 oz) can coconut cream
- 1/4 cup brown sugar, plus 1 tbsp extra
- 1/4 tsp pumpkin pie spice
- 2 None medium bananas, peeled, halved lengthwise
- 2 slices fresh pineapple
- 2 1/2 tbsp butter, chopped
- Combine rice, 8 cups water and spices in a large pot. Bring to a boil and cook for 40-45 mins, until tender. Drain.
- Return rice to pan along with 1/2 cup coconut cream, 1/4 cup sugar and pumpkin pie spice. Stir over low heat until sugar is dissolved. Simmer for 4-5 mins, until liquid is absorbed.
- Meanwhile, preheat broiler. Place bananas and pineapple on a baking tray, cut-side up. Top with butter then sprinkle with remaining sugar. Broil for 5-10 mins, until golden.
- Serve rice with bananas and pineapple. Drizzle with remaining coconut cream.
