Ranger Cookies
- 1 1/4 c. all-purpose flour
- 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. margarine
- 1/3 c. granulated sugar
- 1/2 c. packed brown sugar
- 1 egg
- 1 tsp. vanilla
- 2 c. crisp rice cereal
- 1 (3 1/2 oz.) can coconut
- 1 c. pitted dates, chopped, or 1 c. raisins
- Set oven to 375u0b0.
- Stir together flour, baking powder, baking soda and salt.
- In bowl, beat butter for 30 seconds.
- Add sugars; beat until fluffy.
- Add egg and vanilla; beat well.
- Add dry ingredients to beaten mixture; beat until well mixed.
- Stir in cereal, coconut and fruit.
- Drop by teaspoon, 2 inches apart, onto ungreased cookie sheet.
- Bake at 375u0b0 for 8 to 10 minutes.
- Cool 1 minute before removing to wire rack.
- Makes 48.
