Patatas Bravas With Chorizo
- 1 lb potatoes, peeled, cut into 1 inch cubes
- 1 x 14 oz can chopped tomatoes
- 1 clove garlic, crushed
- 1 None small red chili, finely chopped
- 1/2 tsp cayenne pepper
- 1/4 cup olive oil
- 7 oz chorizo, sliced
- 1 tbsp parsley, chopped
- Cook potatoes in a saucepan of boiling, salted water for 5-10 mins, until just tender. Drain well.
- Meanwhile, combine tomatoes, garlic, chili and cayenne in a saucepan. Cook on low for 2-3 mins, stirring. Season to taste. Keep warm.
- Heat oil in a large frying pan on medium. Fry potatoes and chorizo for 5-10 mins, stirring occasionally, until potatoes are golden and crisp. Drain on paper towels.
- Toss potatoes, chorizo and parsley with the tomato sauce. Transfer to a serving bowl, sprinkle with sea salt and serve.
