Lentil, Chickpea, Arugula And Steak Salad

  1. Heat a grill pan or large skillet on medium-high heat. Rub the steak with olive oil and season with salt and black pepper. Cook for 6 mins on each side for medium. Remove from the heat and let stand for 5 mins.
  2. Meanwhile, place the shallot, vinegar, almond oil and sugar in a large bowl. Whisk to combine. Season with salt and pepper to taste. Add the chickpeas, lentils and arugula; toss to combine.
  3. Trim the fat off the steak. Cut into thin slices. Add to the salad with any resting juices; toss to combine.
