Banana Nut Fritters

  1. Sift flours and baking soda into a large bowl. Stir in 3/4 cup coconut and granulated sugar. Whisk in combined club soda and coconut milk until smooth. (Ad additional club soda if batter is too thick.)
  2. For the filling, mix nuts, butter, 1 tbsp coconut and brown sugar in a small bowl.
  3. Using a small knife, cut a lengthwise slit into each banana half, to make a small pocket. Push a small amount of filling into each, being careful not to overfill.
  4. Heat oil in a medium saucepan on high heat until a small amount of batter sizzles as soon as it is added (350u0b0F).
  5. Working in batches of 3-4, dip banana into batter, allowing excess to drain off. Deep-fry 2-3 mins, turning, until golden. Drain on paper towel. Dust with powdered sugar and sprinkle with lime peel. Serve with ice cream.
