Strawberry Almond Tart
- 100 g plain flour
- 100 g ground almonds
- 50 g muscovado sugar
- 100 g butter, diced
- 1 medium egg
- 25 g whole blanched almonds, finely chopped
- 35 g cornflour
- 315 ml cherry juice
- 2 tbsp caster sugar
- 800 g strawberries, keep one for decoration, chop the rest
- 200 g sour cream
- 1-2 tsp vanilla extract
- 250 g double or whipping cream
- 2 tbsp chocolate sauce
- Preheat the oven to 350u0b0F. Put the flour, ground almonds and brown sugar in a food processor and mix well. Add the butter and egg and process to a smooth dough. Press the dough firmly into the base of a 9 inch springform tart pan. Prick the crust all over with a fork. Sprinkle with the chopped almonds. Cover with parchment paper, then fill with pie weights.
- Bake for 25 mins, remove the pie weights and paper and bake for another 7 mins. Remove from oven and allow to cool.
- Mix the cornstarch with 3 tablespoons of the cherry juice to form a smooth paste. Bring the rest of the juice and the sugar to a boil in a small pot. Whisk in the cornstarch mixture and cook for 1 minute, stirring constantly, until a thick sauce forms. Add the chopped strawberries and stir gently. Spread mixture into the tart crust and chill for 3 hours.
- Whip together the sour cream, vanilla and powdered sugar. Whip the cream until stiff peaks form and fold into the sour cream. Spoon the cream onto the center of the tart. Place a whole strawberry on top and drizzle with chocolate sauce.
