Spaghetti Nests With Shrimp
- 2/3 lb spaghetti
- 1 None leek, trimmed and thinly sliced
- 1 lb broccoli, cut into florets
- 2 None eggs
- 1 1/4 cup milk
- Pinch None grated nutmeg
- 1 tbsp sunflower oil, plus extra to grease
- 2/3 lb raw, peeled large shrimp
- 3 tbsp basil leaves
- Preheat the oven to 325u0b0F. Grease a large baking dish with oil. Bring a large pot of salted water to the boil, add the spaghetti and cook for 6-7 mins then add the leek and broccoli to the pot and cook for a further 4-5 mins, until tender. Drain then refresh under cold water.
- In a bowl, whisk the eggs, milk and nutmeg together and season. Mix the eggs and spaghetti together then use a fork to twist 8 'nests' from the spaghetti. Place each 'nest' in the baking dish. Arrange any leftover vegetables in the dish also. Bake for 35-40 mins, until golden.
- Heat 1 tbsp oil in a non-stick frying pan, add the shrimps and fry for 3-4 mins, turning. Stir in the basil and season. Serve the spaghetti nests on plates and arrange the shrimps on top. Serve.
