Quick Beef Salad With Citrus Dressing

- 2 tbsp brown sugar
- 1/4 cup lime juice
- 1 tbsp fish sauce
- None None red chili, deseeded, finely chopped
- None None Beef Salad
- 9 oz rice vermicelli noodles
- 1 None baby cucumber, halved, sliced
- 1 None large carrot, peeled, shredded
- 3 tbsp fresh mint leaves, plus extra, to serve
- 1/4 cup fresh cilantro leaves, plus extra, to serve
- 1 lb thick sirloin steak, thinly sliced
- 1 tbsp chopped toasted peanuts (optional)
- To make the dressing, combine all ingredients in a bowl. Set aside.
- Cover noodles with boiling water. Let stand for 5 mins then drain and rinse. Toss with vegetables, herbs and dressing. Set aside.
- Heat a large nonstick wok or frying pan over high heat. Stir-fry beef quickly, until browned. Pile beef over noodles. Serve topped with extra herbs and peanuts, if desired.
