Angel Hair With Sun-Dried Tomatoes And Basil Sauce
- 3 Tbsp. virgin olive oil
- 1 Tbsp. unsalted butter
- 2 tsp. minced fresh garlic
- 1 c. shredded basil leaves
- 3 Tbsp. chopped Italian parsley
- 2 Tbsp. chopped sun-dried tomatoes
- 1 large red pepper
- 1 large green pepper
- 3/4 tsp. salt
- 1/4 tsp. fresh ground black pepper
- 12 oz. angel hair pasta, cooked and drained
- freshly grated Romano cheese (optional)
- Heat oil and butter in a large skillet over medium heat.
- Add garlic and cook 1 minute.
- Add remaining ingredients except pasta and cheese to skillet, making sure peppers are roasted and cut into thin strips.
- Toss and just barely heat.
- Add to pasta in large bowl; toss to coat.
- Pass Romano cheese.
- Makes 4 first course servings
