Vegetable Fritters
- 1 cup flour
- 1 cup bean sprouts
- 2 None celery stalks with leaves, finely chopped
- 3 None green onions, thinly sliced on the diagonal, plus additional, to serve
- 3 None cabbage leaves, thinly sliced
- 2 None shallots, finely chopped
- 1 small potato, peeled and cut into fine matchsticks
- 1 clove garlic, finely chopped
- 1/2 cup vegetable oil
- None None Chili sauce, to serve
- Sift flour and 2 tsp salt into a large bowl. Add 1 1/2 cups water and stir until smooth. Add vegetables, garlic and pepper to taste. Stir to combine.
- Heat oil in a large skillet or wok on medium-high heat (until a cube of bread sizzles on contact). Cook 2 tbsp batter per fritter, in batches, for 2 mins each side, until golden.
- Drain on paper towels. Sprinkle with additional green onion and serve with chili sauce.
