Key Lime Pie

  1. Preheat oven to 325u0b0F.
  2. Process graham crackers until finely crushed. Add butter and process until combined. Press into base and sides of an 8 inch tart pan. Chill for 30 mins.
  3. Whisk together condensed milk, egg yolks, heavy cream, lime zest and lime juice. Transfer to pie shell and bake for 20-25 mins, or until filling is just set. Remove from oven.
  4. Increase oven to 425u0b0F. Whip egg whites to soft peaks. Add sugar, 1 tbsp at a time, beating well after each addition, until thick and glossy. Spread over lime filling. Bake for 5 mins, or until meringue is lightly toasted. Let cool for 15 mins. Serve with whipped cream.
