Cornflake Breaded Fish With Chili Mayo

  1. Preheat oven to 475u0b0F. Line 2 large baking trays with parchment paper. Toss squash and potato with oil. Spread over 1 prepared tray and bake for 18 mins, or until golden brown and tender.
  2. Meanwhile, dip fish fillets in egg white then coat in cornflake crumbs. Place on remaining prepared tray and bake for 12 mins, or until golden brown and cooked to your liking.
  3. Cook green beans in boiling salted water for 2 mins, or until just tender. Drain then season to taste. Whisk together sweet chili sauce and mayonnaise. Serve fish with vegetables and sweet chili mayonnaise.
