Sesame John Dory With Beer Battered Sweet Potato Fries
- 1 cup all-purpose flour
- 1 tsp sweet paprika
- 1 1/4 cups beer
- None None John Dory Fillets with Sweet Potato Fries
- 1/2 cup sesame seeds
- 1/4 cup all-purpose flour
- 4 (8.5 oz) john dory fillets, skin removed, each fillet cut into 3 pieces
- 1/4 cup vegetable oil, plus extra to deep-fry sweet potato fries
- 1 None sweet potato, peeled, cut into 1/4 inch slices
- 1 None lime, cut into wedges
- In a medium bowl, whisk together flour, paprika and beer. Set aside.
- Combine sesame seeds and flour in a shallow medium bowl. Coat fish fillets in sesame mixture.
- Heat oil in a large deep frying pan over medium-high heat. Cook fish, in batches, until browned on both sides and cooked through. Cover to keep warm.
- Meanwhile, heat extra oil in a wok or large frying pan over medium-high heat. Dip sweet potato slices in beer batter, draining off excess. Deep-fry sweet potatoes, in batches, until crisp and tender. Drain on paper towels.
- Serve sweet potatoes topped with fish and lime wedges.
