Orange And Almond Cake
- 12 tbsp (1 1/2 sticks) unsalted butter, at room temperature
- 3/4 cup plus 2 tbsp sugar
- 3 None eggs
- 1 1/2 cups ground almonds
- 1/2 cup self-rising flour, sifted
- 1/2 tsp salt
- 3 medium oranges, peeled and thinly sliced
- 1/4 cup orange marmalade
- None None Mascarpone cheese, to serve (optional)
- Preheat the oven to 300u0b0F. Lightly grease and line the bottom of an 8-inch square baking pan with parchment paper. Sprinkle evenly with 2 tbsp sugar.
- Beat the butter and 3/4 cup sugar in a large bowl with an electric mixer until light and fluffy. Add the eggs, 1 at a time, beating well after each addition. Fold in the almonds, flour and salt.
- Arrange 1/2 of the orange slices on top of the sugar in the prepared pan. Spread 1/2 of the cake batter over the oranges. Repeat with the remaining orange slices and cake batter.
- Bake for 1 hour 15 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Invert onto a serving plate.
- Heat the marmalade and 2 tsp water in a small saucepan on low heat. Cook for 5 mins, stirring, until the marmalade has dissolved. Brush the warm glaze over the cake. Serve with mascarpone, if desired.
