Chicken Wings With Satay Sauce
- 12 None chicken wings
- 1/4 cup crunchy peanut butter
- 3/4 cup coconut milk
- 4 tbsp sweet chili sauce
- 8 tsp soy sauce
- 3 tbsp lemon juice
- 9 oz mixed greens
- 1/2 None small Chinese cabbage, finely shredded
- 3 None green onions, thinly sliced diagonally
- 7 oz long-grain white rice, cooked
- Preheat oven to 425u0b0F. Grease a large roasting pan.
- Arrange chicken wings in roasting pan. Combine peanut butter, coconut milk, 2 tbsp chili sauce, 2 tsp soy sauce and 1 tbsp lemon juice in a small saucepan over low heat. Cook for 2-3 mins, or until heated through and smooth. Pour 1/2 satay sauce over chicken and toss to coat. Cover with foil and bake for 10 mins. Remove foil and bake for 10 mins, or until chicken is cooked through.
- Meanwhile, arrange mixed greens, cabbage and green onions in a large bowl. Combine remaining chili sauce, soy sauce and lemon juice then pour over salad and toss to combine.
- Serve chicken with salad, remaining satay sauce and rice.
