Nachos With Chunky Guacamole
- 6 None flour tortillas
- 1 oz taco seasoning mix
- 10.5 oz mild tomato salsa
- 1 (13.5 oz) can mixed beans, rinsed, drained
- 2 oz stuffed green olives, halved
- 1 cup grated Cheddar cheese
- None None Guacamole
- 2 None large avocados, pitted, peeled
- 1 None onion, finely chopped
- 1 None large tomato, chopped
- 1 None lime, juiced
- 1 tbsp chili sauce
- 1 tbsp fresh cilantro leaves
- 2 cloves garlic, minced
- None None sour cream, sweet chili sauce and fresh cilantro, to serve
- Preheat oven to 350u0b0F. Line a baking tray with parchment paper.
- Arrange tortillas on tray. Lightly coat with oil and sprinkle with taco seasoning mix. Bake for 5-10 mins, or until crisp. Let cool then break into bite-sized pieces and arrange in a medium baking dish. Spoon salsa over chips followed by beans, olives and cheese. Bake for 10-15 mins, or until cheese melts.
- Meanwhile, to make the guacamole, lightly mash avocado. Mix in remaining ingredients. Set aside.
- Serve nachos topped with guacamole, sour cream, sweet chili sauce and cilantro.
