White Chocolate And Vanilla Rice Pudding
- 1/2 cup milk
- 1 1/4 cups half-and-half
- 3 1/2 oz white chocolate, broken
- 1 tsp vanilla bean paste
- 3 None medium eggs
- 1/3 cup, plus 5 tsp sugar
- 3/4 cup cooked rice
- 1/2 cup golden raisins
- 1/4 tsp ground cinnamon
- None None Heavy cream or ice cream, to serve (optional)
- Preheat oven to 350u0b0F. Place four 1-cup (8-oz) ovenproof ramekins in a large roasting pan.
- Combine milk and half-and-half in a medium saucepan. Watching closely, bring to a boil on high, then immediately remove from the heat (known as 'scalding'). Stir in chocolate and vanilla. Allow to cool to room temperature.
- In a medium bowl, whisk the milk mixture, eggs and sugar until well combined. Stir in rice and raisins.
- Divide mixture evenly between prepared ramekins. Sprinkle with cinnamon. Add enough boiling water to the roasting pan to come halfway up the outsides of the ramekins. Bake 30-35 mins. Serve puddings warm with heavy cream or ice cream, if desired.
