Teriyaki Chicken And Cashew Stir Fry With Noodles

  1. Place noodles in a large heatproof bowl and cover with boiling water. Separate noodles with a fork and drain.
  2. Heat 1 tbsp oil in a wok over medium heat. Stir-fry chicken for 1-3 mins, or until browned lightly. Remove from pan and cover to keep warm.
  3. Add remaining oil to wok. Stir-fry onion, garlic, ginger and pepper for 2 mins, or until onion is just tender.
  4. Return chicken to wok along with sugar, soy sauce, teriyaki sauce and choy sum. Stir-fry for 2-3 mins, or until chicken is cooked through and choy sum is wilted.
  5. Add noodles and 1/3 cup nuts. Toss gently until heated through. Serve topped with remaining nuts.
