Strawberry And Cream Parfait With Coconut Granola
- 1 cup rolled oats
- 1/4 cup all-purpose flour, sifted
- 1/4 cup granulated sugar
- 1/4 cup desiccated coconut
- 2 1/2 tbsp butter, chopped
- 1/2 tbsp honey
- 1/4 tsp baking soda
- 1/2 cup heavy cream
- 1 tbsp powdered sugar
- 1 tsp coconut extract
- 1/2 lb mascarpone cheese
- 1/4 lb strawberries, hulled, quartered
- Preheat oven to 325u0b0F. Lightly grease a baking tray.
- Combine oats, flour, sugar and coconut. Melt butter and 1 tsp honey over low heat for 2-3 mins, until melted. Combine 2 tsp boiling water with baking soda then mix into butter mixture. Combine with dry ingredients and mix well. Transfer to prepared pan and bake for 8-10 mins, until golden. Let cool.
- Meanwhile, whip heavy cream, powdered sugar and coconut extract to soft peaks. Fold into mascarpone.
- Distribute 1/2 of granola between 4 dessert glasses. Drizzle with 1/2 of remaining honey. Top with a layer of strawberries. Spoon mascarpone mixture over top. Finish with remaining granola and honey. Chill until ready to serve.
