Westphalian Chicken Soup

  1. Simmer the bacon and onion in 2 cups water for about 1 hour. Add the green and white beans, herbs, potatoes, carrots, apples and pears to the bacon and onions, pour in the stock and simmer for about 30 mins. Add the sugar and vinegar and season and serve garnished with oregano.
