Chicken Salad With Thai Dressing
- 2 tbsp Chinese cooking wine or sherry
- 1 tbsp vegetable oil
- 1 tbsp light soy sauce
- 2 tsp fish sauce
- 2 tsp brown sugar
- 3 cups shredded Napa cabbage
- 1 1/2 cups shredded cooked chicken
- 6 None cherry tomatoes, quartered
- 6 None green onions, thinly sliced
- 1/4 cup roasted peanuts, chopped
- 1 None red chili pepper, thinly sliced
- 1/2 cup fresh cilantro leaves
- 2 tbsp fresh mint leaves, torn
- 2 None hard-boiled eggs, peeled and quartered
- For the dressing, mix wine, oil, soy sauce, fish sauce and sugar in a small bowl with a whisk until well blended.
- Toss cabbage, chicken, tomatoes, onions, peanuts, chili pepper and herbs in a large bowl. Drizzle with the dressing; toss to coat well. Add eggs and serve.
