London Broil With Peppers And Onion
- 3/4 cup Lawry's steak and chop marinade, or similar marinade
- 1/4 cup chopped scallion
- 1 tbsp Dijon mustard
- 1 (3 lb) top round London broil
- 1 None small red onion, peeled and sliced
- 3 None bell peppers, seeded and sliced
- Combine marinade, scallion and mustard. Reserve 1/4 cup. Combine remaining marinade with steak and turn to coat. Chill for 1 hour to marinate.
- Preheat oven to 400u0b0F. Remove steak from marinade and discard used marinade. In a large ovenproof frying pan, sear steak over high heat. Transfer to oven and roast, brushing occasionally with pan juices, for 25 mins, or until a thermometer inserted into meat reads 145u0b0F for medium-rare, or until cooked to your liking. Let rest for 10 mins then slice.
- Meanwhile, in a large frying pan, saute onion, peppers and reserved marinade for 2 mins, or until tender. Season.
- Arrange steak on a serving plate and top with sauteed onion and peppers. Serve.
