Easy Apple Pie
- 2 sheets ready-made shortcrust pastry
- 5 None large Granny Smith apples, peeled, cored, cut into chunks
- 2 tbsp sugar
- 1/2 tsp vanilla extract
- 1/2 tsp ground cinnamon or nutmeg
- 1 None large egg
- 1 tsp milk
- None None powdered sugar, for dusting
- None None cream, to serve
- Preheat oven to 400u0b0F. Grease a round pie dish and lay 1 sheet pastry in it. Trim to fit, line base with parchment paper and fill with dry beans. Bake 10 mins. Remove paper and beans and set aside.
- For the filling, pour 1/2 cup water into a saucepan and add apple chunks, 1 tbsp sugar, vanilla and cinnamon or nutmeg. Cook over medium heat 10 mins. Drain excess liquid.
- To assemble, spread filling evenly on pie base. Sprinkle with remaining sugar. Lay remaining pastry sheet on a lightly floured work surface and cut out a circle to fit top of pie. Lay over filling and press edges together to seal. In bowl, whisk egg and milk together with a fork. Brush on pie top. Bake 20-30 mins, until top is golden. Dust with powdered sugar and serve warm with cream.
