Mini Meatloaves
- 1 1/4 lb ground beef
- 2/3 cup breadcrumbs
- 1 None onion, peeled and finely chopped
- 1 tbsp tomato paste
- 1 None egg, beaten
- 1 1/4 lb mozzarella, sliced
- 1 None small tomato, sliced
- 1/3 cup Parmesan cheese, grated
- 1 sprig fresh rosemary, halved
- 1 1/4 lb frozen potato wedges
- 1 tbsp white wine vinegar
- 3 tbsp olive oil
- 1 pinch granulated sugar
- 2 heads baby gem lettuces, leaves separated
- 5.25 oz cherry tomatoes, halved
- Preheat oven to 400u0b0F. Line a baking tray with parchment paper. Combine ground beef, breadcrumbs, onion, tomato paste and egg. Season then form into 4 small meatloaves. Transfer to prepared pan. Arrange mozzarella and sliced tomatoes over 2 meatloaves and Parmesan and rosemary over remaining meatloaves. Bake with potato wedges for 25-30 mins, until meatloaves are cooked through.
- Whisk vinegar, oil and sugar. Season then toss with lettuce and tomatoes. Serve with meatloaves.
