Crisp Apple And Almond Cookies

  1. Preheat the oven to 350u0b0F. Grease and line a 10 x 3-inch baking pan with parchment paper, extending paper above long sides for handles.
  2. Beat the egg whites and sugar in a medium bowl with an electric mixer until the sugar dissolves. Fold in the sifted flour then the cinnamon, nuts and apple. Spread into the prepared pan.
  3. Bake for about 30 mins. Cool in pan 10 mins. Remove from pan; cool completely on wire rack.
  4. Reduce the oven temperature to 300u0b0F.
  5. Using a serrated knife, slice the cooled bread thinly. Place the slices on baking pans. Bake for about 15 mins or until crisp. Remove from pans; cool completely on wire rack.
