Roasted Turkey Thigh With Red Cabbage
- 2 3/4 lbs turkey thigh, bone removed
- 2 tbsp rapeseed oil
- 1 None large red cabbage, trimmed and sliced
- 1 None onion, peeled and sliced
- 6 tbsp balsamic vinegar
- 1/2 cup pear juice
- 1/2 cup vegetable stock
- 2 None bay leaves
- 5 None black peppercorns
- 2 None pears, peeled, seeds removed and sliced
- 3 oz white seedless grapes
- Preheat the oven to 400u0b0F. Season the turkey with salt and pepper then roll up and tie using kitchen string. Heat the oil in a roasting pan on the stove. Add the turkey joint and sear, turning for 2-3 mins. Remove from the pan.
- Add the cabbage and onion to the roasting pan and saute for 3-4 mins, stirring. Deglaze the pan with the vinegar, pear juice, stock, bay leaves and peppercorns. Place the turkey on the cabbage in the pan then cover tightly with foil. Bake for 1 hour, basting halfway through.
- Uncover the turkey and baste once more, then place back in the oven, uncovered, for a final 20-30 mins, until cooked through. Add the pear and grape to the cabbage for the final 15-20 mins of baking. Season to taste then slice the turkey and serve.
