Chicken Drumsticks With Baked Potato Wedges
- 1 tsp paprika
- 5 tbsp oil
- 4 None chicken drumsticks
- 2 lbs potatoes, cut into wedges
- 2 None small red bell peppers, seeded and cut into strips
- 2 sprigs rosemary
- 2 None zucchinis, sliced
- Preheat the oven to 400u0b0F. Mix the paprika and 2 tbsp of oil in a bowl. Coat the drumsticks with the paprika mixture and place them on an oiled baking sheet. Roast them for 40-60 mins until crispy. Meanwhile, mix the potatoes and 1 tbsp of oil and season to taste. About 30 mins before the end of the chicken's cooking time, add the potatoes arranging them on the baking sheet around the chicken.
- While the chicken and potatoes are cooking, heat 1 tbsp of oil in a pan and fry the peppers for 5 mins, add 1 sprig of rosemary after about 4 mins. Remove the peppers from the pan and keep them warm. Clean the pan, heat another 1-2 tbsp of oil and fry the zucchini slices for 4-5 mins, adding the other sprig of rosemary after 3-4 mins. Season to taste. Mix the vegetables together and serve them with the drumsticks and potato wedges.
