Raisin And Chocolate Cake

  1. Preheat oven to 350u0b0F. Generously grease a 9 1/2 inch bundt or ring pan.
  2. Combine raisins and 2 cups water in a medium saucepan. Bring to a boil. Reduce heat and simmer for 10 mins. Remove from heat and stir in baking soda, cocoa powder, spices and vanilla extract. Let cool to room temperature.
  3. In a stand mixer, cream butter and sugar together until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Fold in flour then raisin mixture. Transfer to prepared pan and bake for 1 hour 10 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
  4. Meanwhile, to make the chocolate glaze, stir chocolate and butter in a medium heatproof bowl set over a medium saucepan of simmering water until smooth.
  5. Pour glaze over cooled cake. Let stand for 30 mins before serving.
