Raisin And Chocolate Cake
- 1 3/4 cups raisins
- 1 tsp baking soda
- 1/3 cup cocoa powder
- 2 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1 tsp vanilla extract
- 1 cup butter, chopped
- 1 2/3 cups granulated sugar
- 4 None large eggs
- 1 2/3 cups all-purpose flour
- 1 cup self-rising flour, plus 2 tbsp
- None None Chocolate Glaze
- 7 oz dark chocolate, chopped coarsely
- 1/2 cup butter, chopped
- Preheat oven to 350u0b0F. Generously grease a 9 1/2 inch bundt or ring pan.
- Combine raisins and 2 cups water in a medium saucepan. Bring to a boil. Reduce heat and simmer for 10 mins. Remove from heat and stir in baking soda, cocoa powder, spices and vanilla extract. Let cool to room temperature.
- In a stand mixer, cream butter and sugar together until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Fold in flour then raisin mixture. Transfer to prepared pan and bake for 1 hour 10 mins, until a skewer inserted in the center comes out clean. Let cool in pan for 5 mins then transfer to a wire rack to cool completely.
- Meanwhile, to make the chocolate glaze, stir chocolate and butter in a medium heatproof bowl set over a medium saucepan of simmering water until smooth.
- Pour glaze over cooled cake. Let stand for 30 mins before serving.
