Cajun Sauteed Chicken

  1. Rub chicken with 3/4 teaspoon of Cajun seasoning mixture.
  2. In a nonstick skillet over medium-high heat, heat oil.
  3. Add chicken; brown for 2 minutes per side.
  4. Remove chicken and reserve.
  5. Add onion and green pepper to skillet.
  6. Saute for 1 to 2 minutes, until vegetables begin to soften.
  7. Add tomatoes, garlic and remaining Cajun seasoning.
  8. Cook, stirring, for 2 to 3 minutes. Reduce heat to medium-low; return chicken to pan.
  9. Cover; simmer for 6 to 12 minutes, turning 2 to 3 times, until chicken is cooked through.
