Cajun Sauteed Chicken
- 1 pkg. boneless chicken breasts
- 1 1/4 tsp. Cajun seasoning mixture for chicken, divided
- 1 1/2 Tbsp. olive oil
- 1/2 c. chopped onion
- 1/2 c. chopped green bell pepper
- 1 (14 1/2 oz.) can Cajun or Mexican style stewed tomatoes
- 1 1/2 tsp. minced garlic (1 small clove)
- Rub chicken with 3/4 teaspoon of Cajun seasoning mixture.
- In a nonstick skillet over medium-high heat, heat oil.
- Add chicken; brown for 2 minutes per side.
- Remove chicken and reserve.
- Add onion and green pepper to skillet.
- Saute for 1 to 2 minutes, until vegetables begin to soften.
- Add tomatoes, garlic and remaining Cajun seasoning.
- Cook, stirring, for 2 to 3 minutes. Reduce heat to medium-low; return chicken to pan.
- Cover; simmer for 6 to 12 minutes, turning 2 to 3 times, until chicken is cooked through.
