Slow-Cooker Massaman Beef Curry
- 2 tbsp peanut oil
- 2 None onions, cut into thin wedges
- 2 1/4 lbs beef chuck steak, cubed
- 2/3 cup Massaman curry paste
- 1 cup coconut milk
- 1 cup chicken stock
- 2 None cinnamon sticks
- 2 None dried bay leaves
- 3 medium potatoes, peeled and coarsely chopped
- 1/2 cup roasted unsalted peanuts
- 2 tbsp brown sugar
- 1 tbsp fish sauce
- 1/3 cup loosely packed cilantro leaves
- 1 None lime, cut into wedges
- Heat half the oil in a large skillet on medium heat. Cook the onion, stirring, for 10 mins or until lightly browned. Transfer the mixture to a 4 1/2-quart slow cooker.
- Heat the remaining oil in same pan on high heat. Cook the beef, in batches, until browned. Add the curry paste and cook, stirring, for 1 min. Transfer the mixture to the cooker.
- Add the coconut milk, stock, cinnamon, bay leaves, potato and nuts to the cooker; cover. Cook on low for 8 hours.
- Stir in the brown sugar and fish sauce. Serve the curry sprinkled with cilantro and garnished with lime wedges.
