Slow-Cooker Massaman Beef Curry

  1. Heat half the oil in a large skillet on medium heat. Cook the onion, stirring, for 10 mins or until lightly browned. Transfer the mixture to a 4 1/2-quart slow cooker.
  2. Heat the remaining oil in same pan on high heat. Cook the beef, in batches, until browned. Add the curry paste and cook, stirring, for 1 min. Transfer the mixture to the cooker.
  3. Add the coconut milk, stock, cinnamon, bay leaves, potato and nuts to the cooker; cover. Cook on low for 8 hours.
  4. Stir in the brown sugar and fish sauce. Serve the curry sprinkled with cilantro and garnished with lime wedges.
