Easy Pineapple Sherbet
- 1 (15 1/4 oz.) can unsweetened crushed pineapple (undrained)
- 1 1/4 c. unsweetened pineapple juice
- 1/4 c. sugar
- 1 (12 oz.) can lemon-lime carbonated beverage, chilled
- 3/4 c. evaporated skimmed milk
- Drain crushed pineapple, reserving 3/4 cup juice.
- Set pineapple aside.
- Combine reserved mixture juice, 1 1/4 cups pineapple juice and sugar in a saucepan; bring to a boil.
- Reduce heat; simmer, stirring occasionally, 3 minutes, or until sugar dissolves.
- Pour into a large bowl; cover and chill.
- Stir in carbonated beverage and milk.
- Pour into freezer container of a 5-quart hand-turned or electric freezer.
- Freeze according to manufacturer's instructions.
- Transfer to a large bowl; fold in crushed pineapple.
- Store in freezer.
- Yields 6 1/4 cups (113 calories, 1% from fat, per 3/4-cup serving).
