Pineapple Fruit Loaf
- 1 can (16 oz) crushed pineapple in natural juice
- 1/2 cup chopped pitted dates
- 1/2 cup golden raisins
- 1/2 cup sugar
- 8 tbsp (1 stick) butter, chopped
- 1 tsp mixed spice, such as pumpkin pie spice
- 1 tsp nutmeg
- 1 tsp ground cinnamon
- 1/4 cup chopped pecans
- 1 cup self-rising flour
- 3/4 cup whole wheat self-rising flour
- 1/4 tsp baking soda
- 2 None eggs, lightly beaten
- Preheat the oven to 350u0b0F. Lightly grease and line an 8 x 4-inch loaf pan with parchment paper.
- Place pineapple and juice, dates, raisins, sugar, butter and spices in a medium saucepan on low heat. Stir until sugar dissolves. Bring to a boil. Cook 3 mins. Transfer to a large bowl; cool.
- Stir in nuts. Sift combined flours and baking soda into a medium bowl. Fold into fruit mixture with eggs. Spoon into prepared pan.
- Bake 30-35 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
