Pineapple Fruit Loaf

  1. Preheat the oven to 350u0b0F. Lightly grease and line an 8 x 4-inch loaf pan with parchment paper.
  2. Place pineapple and juice, dates, raisins, sugar, butter and spices in a medium saucepan on low heat. Stir until sugar dissolves. Bring to a boil. Cook 3 mins. Transfer to a large bowl; cool.
  3. Stir in nuts. Sift combined flours and baking soda into a medium bowl. Fold into fruit mixture with eggs. Spoon into prepared pan.
  4. Bake 30-35 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
