Salted Double Chocolate Tart
- 8 oz plain chocolate cookies
- 2 tbsp sugar
- 1/2 tsp sea salt flakes
- 5 tbso butter, melted
- 1/2 cup heavy cream, plus extra, whipped, to serve
- 4 oz 70% cocoa dark chocolate, finely chopped
- 14 oz can condensed milk
- 1/2 tsp vanilla extract
- 4 None large egg yolks
- 1 tsp powdered sugar
- Preheat oven to 350u0b0F. For the tart base, place cookies, sugar and salt in a food processor and process into fine crumbs. With motor running, drizzle in melted butter. Line an 8 inch diameter pie pan with the mixture, pressing it evenly into the base and sides. Chill.
- For the filling, melt cream and chocolate together in a heatproof bowl set over a saucepan of gently simmering water. Stir until chocolate has just melted. Remove from heat. In a separate bowl, whisk together condensed milk, vanilla and egg yolks. Add to the chocolate and cream and whisk to combine. Pour into tart base and bake 30 mins, or until just set. Cool to room temperature then refrigerate until cold. Lightly dust with powdered sugar and serve with a dollop of whipped cream.
