Goat Cheese, Pea And Mint Salad
- None None For the Dressing
- 1 tsp wholegrain mustard
- 1 tbsp lemon juice
- 1 tbsp honey
- 1 tbsp olive oil
- None None For the Salad
- 3 oz fresh peas, cooked
- 5.25 oz small, pale celery stalks, thinly sliced
- 3 tbsp young celery leaves
- 1 head frisee lettuce, trimmed
- 1 head treviso or radicchio, leaves separated
- 3 None medium red radishes, thinly sliced
- 1 None medium red apple, thinly sliced
- 3 tbsp fresh mint leaves
- 7.75 oz goat cheese, sliced
- To make the honey mustard dressing, whisk together all ingredients. Set aside.
- Toss together all ingredients for salad. Just before serving, drizzle honey mustard dressing over salad and toss to combine.
