Vegetable Pakoras

  1. Combine flour, chili, cilantro, spices and 1 tsp salt. Gradually whisk in 1 cup water until smooth.
  2. Heat oil over medium-high heat. Working in batches, lightly coat vegetables in batter then deep-fry for 3 mins, or until golden and tender. Drain on paper towels. Season.
  3. Meanwhile, combine yogurt and mint. Season. Serve with vegetable pakoras.
