Vegetable Pakoras
- 8 3/4 cups chickpea (or gram) flour
- 1 None long green chili, deseeded, finely chopped
- 2 tbsp fresh cilantro, chopped
- 1 tsp ground turmeric
- 1 tsp garam masala
- None None vegetable oil, for deep-frying
- 1 None large red pepper, deseeded, cut into pieces
- 2/3 lb cauliflower, cut into florets
- 1 None large zucchini, thickly sliced on a bias
- 2/3 cup plain yogurt
- 2 tbsp fresh mint, finely chopped
- Combine flour, chili, cilantro, spices and 1 tsp salt. Gradually whisk in 1 cup water until smooth.
- Heat oil over medium-high heat. Working in batches, lightly coat vegetables in batter then deep-fry for 3 mins, or until golden and tender. Drain on paper towels. Season.
- Meanwhile, combine yogurt and mint. Season. Serve with vegetable pakoras.
