Apple, Kale And Sausage Stuffing
- 2 tbsp olive oil
- 1 cup chopped celery
- 1 None large onion, chopped
- 1 cup chopped fresh kale leaves
- 3 None red apples, diced
- 1 tbsp fresh sage
- 1 tbsp fresh thyme
- 1/3 cup minced fresh parsley
- 6 cups day-old cubed white or whole wheat baguette
- 10 oz cooked turkey sausage crumbles, thawed, like Jimmy Dean
- 2 cups chicken broth
- 2 None large eggs
- Preheat oven to 350u0b0F.
- In a large skillet, heat oil over medium heat. Cook celery, onion, kale and apples for 5 mins, or until tender. Transfer to a large mixing bowl along with herbs, bread and sausage. Whisk together broth and eggs then pour over stuffing. Season. Transfer to greased baking dish and cover with foil.
- Bake stuffing for 40 mins, or until heated through. Remove foil during last 10 mins.
