Shrimp Dumplings And Choy Sum Soup

  1. To make the dumplings, combine shrimp, onion, garlic, cilantro, oyster sauce, soy sauce, fish sauce and sugar. Place 1 tsp mixture in the center of each wrapper. Wet edges with a little water and fold in 1/2 to enclose filling, pressing edges lightly to seal. Arrange on a baking tray and chill for 5 mins.
  2. Meanwhile, to make the soup, bring stock, 2 cups water, soy sauce, ginger and sesame oil to a boil. Reduce heat and simmer for 5 mins. Add dumplings and 1/2 of the onions. Simmer gently for 3-5 mins. Add choy sum and simmer for 1 min.
  3. Divide dumplings between bowls. Ladle soup and choy sum on top. Garnish with remaining onions to serve.
