Shrimp Dumplings And Choy Sum Soup
- 8 None medium raw shrimp, peeled, deveined and chopped
- 1 None spring onion, finely chopped
- 1 clove garlic, minced
- 1 tbsp fresh cilantro, chopped
- 1 tsp oyster sauce
- 1 tsp light soy sauce
- 1 tsp fish sauce
- 1/4 tsp sugar
- 20 None square wonton wrappers
- None None Choy Sum Soup
- 6 cups chicken stock
- 1/4 cup light soy sauce
- 1 tbsp shredded ginger
- 1 tsp sesame oil
- 3 None spring onions, sliced diagonally
- 1 bunch choy sum (or pak choy), trimmed, cut into 2 1/2 inch pieces
- To make the dumplings, combine shrimp, onion, garlic, cilantro, oyster sauce, soy sauce, fish sauce and sugar. Place 1 tsp mixture in the center of each wrapper. Wet edges with a little water and fold in 1/2 to enclose filling, pressing edges lightly to seal. Arrange on a baking tray and chill for 5 mins.
- Meanwhile, to make the soup, bring stock, 2 cups water, soy sauce, ginger and sesame oil to a boil. Reduce heat and simmer for 5 mins. Add dumplings and 1/2 of the onions. Simmer gently for 3-5 mins. Add choy sum and simmer for 1 min.
- Divide dumplings between bowls. Ladle soup and choy sum on top. Garnish with remaining onions to serve.
