Crispy Fish With Chili Lime Mayonnaise
- None None Vegetable oil, for deep-frying
- 3/4 cup mayonnaise
- 1 tbsp lime juice
- 1 clove garlic, crushed
- 1 small fresh red chili pepper, seeded and finely chopped
- 3/4 cup self-rising flour
- 1/2 tsp salt
- 1 cup chilled club soda
- 1 lb whiting or cod fillets, bones removed, sliced into thin diagonal strips
- None None Lemon or lime wedges, to serve
- Heat the oil to 350u0b0F in a deep-fat fryer or large skillet. Combine the mayonnaise, lime juice, garlic and chili pepper in a small bowl. Refrigerate until ready to serve.
- Place flour and salt in a medium bowl. Whisk in the club soda until combined. Dip fish in batter in batches and deep-fry until lightly browned and cooked through. Drain on a wire rack.
- Serve fish with mayonnaise mixture and lemon or lime wedges.
